Alvinne was founded in 2004 and moved to their new facility in 2011, in Moen. They brew beer fro passionate beer lovers all over the world. Their mission is to deliver world class innovative beers, pushing the classical barriers, and using only malt, water, hops, yeast and the flavor of used oak barrels. They brew about nine base beers, then use fruit additions and oak aging to add variety to their portfolio. They have cultivated their own yeast strain for their house beer, the Morpheusyeast, a combination of two Saccharomyces strains and a Lactobacillus bacteria strain (the same bacteria that make yogurt!). This make Alvinne a innovator for mixed fermentation sour beers.
Morpheus Wild starts as a sour Belgian Blond ale, with 40% wheat in the grist along with malted barley. The wheat give the beer a softer, fuller mouthfeel. Alvinne’s legendary Morpheusyeast deliver this sour ale that is blended across several vintages to create the final product, a wild, tart 5.9% Belgian ale.
