Yet, as an American craft brewer, Hi-Wire is elated to participate in the culture of experimentation that has developed here. With the opening of the Big Top Production Brewery & Taproom, the South Slope Specialty Brewery has become an experimental hub for creating exciting barrel-aged sour and wild ales in addition to housing our pilot system for recipe development and fun small-batch creations.
Vintage Sour Ales, 8.11% ABV, is a tribute to this classic “beer for aging” in stainless tanks with London Ale yeast for two weeks before resting in a red wine foeder on Brettanomyces for 11 months. This beer came to life with huge notes of candy peaches, dark fruit, and subtle earl grey on the nose, balanced by flavors of nutty toffee and a soothing sourness.
